These Peach Crumble Bars are a delightful blend of ripe peaches and a crumbly almond flour topping. This recipe is easy to make, offering irresistible flavors and textures, perfect for a quick dessert or a comforting snack.

- 3 cups ripe peaches diced small
- 2 tablespoons maple sugar
- 1 tablespoon tapioca flour
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract

- 2 1/2 cups blanched almond flour
- 1/3 cup tapioca flour
- 1/2 cup maple sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup refined coconut oil melted and cooled slightly
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract optional
Instructions
- Preheat your oven to 350°F and line an 8×8 inch baking pan with parchment paper.
- In a medium skillet, combine the peaches, maple sugar, tapioca flour, lemon juice, vanilla, and sea salt. Cook over medium heat for 4-5 minutes until the peaches are slightly soft and juices thicken. Remove from heat and let cool.
- In a large bowl, mix the almond flour, tapioca flour, maple sugar, baking soda, and sea salt.
- Add the melted coconut oil, egg, vanilla extract, and almond extract (if using) to the dry ingredients. Stir until you have a crumbly dough that holds together.
- Press about 2/3 of the dough firmly into the bottom of the prepared baking pan to form the crust.
- Bake the crust for 10-12 minutes until lightly golden around the edges. Allow to cool for 5 minutes after baking.
- Spread the peach filling evenly over the cooled crust.
- Crumble the remaining dough over the peach filling in large and small pieces.
- Bake for another 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling.
- Allow to cool completely at room temperature, then refrigerate for 1-2 hours before slicing.
Notes
For added flavor, try using different extracts such as lemon or orange.
Ensure peaches are ripe for the best sweetness in the filling.
These bars can be stored in the refrigerator for up to a week.
