Description
This homemade Peach Ice Cream is bursting with sweet, fresh peach flavor. With just a few simple ingredients and no churn needed, it’s the perfect treat to cool off on warm days!
Ingredients
Scale
- 2 cups ripe peaches peeled and diced (about 3–4 peaches)
- 3 tablespoons granulated sugar
- 1 teaspoon lemon juice
- Pinch of salt
- 2 large eggs
- 4 large egg yolks
- 1 1/4 cups granulated sugar
- 2 cups heavy whipping cream
- 2 cups half and half
- 2 tablespoons pure vanilla extract
- 1 tablespoon bourbon optional
Instructions
- In a medium bowl, combine diced peaches, sugar, lemon juice, and salt. Toss well and let sit for 20-30 minutes to release juices.
- Transfer half of the peaches and their juices to a small saucepan and simmer over medium heat for 5-7 minutes until softened. Remove from heat and let cool.
- Pulse the cooked peaches lightly in a blender or food processor, leaving some texture. Set aside to cool.
- Keep the remaining fresh peaches in the refrigerator to fold into the mixture later.
Notes
For extra flavor, try adding a splash of bourbon: it enhances the peach taste beautifully.
Make sure to chill the ice cream mixture thoroughly before churning for the best results.
Serve with fresh peach slices for an added touch.
