Instructions
- Cube the peaches. If frozen, thaw them first. If fresh, peel before cubing.
- In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch.
- Heat the mixture until the peach juice separates and comes to a simmer.
- Cook for 10 minutes, stirring occasionally until thickened. Lightly mash about 20% of the peaches with a potato masher.
- Cook for an additional minute, then remove from heat. Cool completely before using.
