Description

This pistachio pesto combines fresh basil and rich parmesan for an irresistible flavor. Quick and simple to prepare, it’s perfect for pasta dishes, sandwiches, or as a dip!


Ingredients

  • 2 cups basil, packed
  • 2 garlic cloves
  • ½ cup pistachios
  • ⅓ cup parmesan cheese, freshly grated
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp red pepper flakes
  • ½ cup olive oil

Instructions

  1. In a food processor, combine basil, garlic, pistachios, parmesan cheese, salt, pepper, and red pepper flakes. Pulse to mix well.
  2. While the food processor is running, pour in the olive oil gradually until the mixture blends smoothly.
  3. Transfer the pesto to a bowl or a glass jar for serving.

Notes

Pesto can be stored in a sealed jar in the fridge for up to 3 days.
For longer storage, freeze the pesto in portions for up to 5 months.
