- 4 pork chops
- Salt & pepper to taste
- 1/4 teaspoon garlic powder
- Flour (for dredging)
- 4 tablespoons butter divided
- 1 tablespoon olive oil
- 1/4 cup chicken broth or dry white wine
- 1 tablespoon lemon juice + zest of 1 lemon
- 1 tablespoon brined capers drained
- 1/2 cup heavy/whipping cream
- Garnish (optional) chopped parsley and/or freshly grated parmesan cheese
Instructions
- Generously season the pork chops with salt, pepper, and garlic powder. Dredge them in flour.
- In a skillet, heat half of the butter with the olive oil over medium-high heat.
- Once hot, add the pork chops to the skillet. Sear for 3-5 minutes on each side until golden brown. Transfer to a plate.
- Remove the skillet from heat and add chicken broth, lemon juice, lemon zest, remaining butter, and capers. Scrape any browned bits from the bottom.
- Stir in the cream and return the skillet to heat. Once bubbling, add the pork chops back in.
- Cook for an additional 3-5 minutes, until the pork is cooked through and the sauce reduces to your preference.
- Serve with optional fresh parsley and/or grated parmesan cheese.
Notes
For extra flavor, let the pork marinate in lemon juice and garlic for 30 minutes before cooking.
Adjust lemon juice according to your taste—more for tanginess, less for a milder flavor.
