Description

Pumpkin French Toast Casserole is a delightful dish bursting with flavor. With its creamy pumpkin mixture and crispy streusel topping, it’s a simple yet delicious option for brunch or breakfast gatherings. This recipe combines wholesome ingredients like french bread, milk, and spices, making it a memorable and cozy meal.

  • 1 (14 oz) day old french bread, cubed
  • 3 cups whole milk
  • 1 (15 oz) can pumpkin puree
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 6 eggs
  • 1/2 cup butter, cold & cubed
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 tsp pumpkin pie spice
  • 1 cup pecans, chopped, optional

Instructions

  1. Spray a 9 x 13 inch pan with non-stick spray and cube the bread, spreading it evenly in the pan.
  2. In a large mixing bowl, combine milk, pumpkin puree, sugar, brown sugar, vanilla, pumpkin pie spice, and eggs. Whisk until well mixed.
  3. Pour the mixture over the cubed bread evenly. Use a fork to gently press the bread into the pumpkin mixture to soak it up.
  4. Cover the dish and refrigerate for at least 3 hours.
  5. Preheat the oven to 350 degrees just before baking.
  6. Make the streusel topping by adding cold, cubed butter, brown sugar, flour, and pumpkin pie spice to a food processor. Pulse until crumbly.
  7. Sprinkle the streusel topping evenly over the casserole, adding chopped pecans if using.
  8. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Notes

For best results, use day-old bread to allow for better absorption of the custard mixture.
Feel free to adjust the amount of sugar based on your sweetness preference.
The casserole can be prepared the night before and baked in the morning for convenience.
