Description

These Pumpkin Spice Cookies offer mouthwatering flavor and simple preparation. Made with butter, pumpkin pie spice, and a rich frosting, they are perfect for sharing or enjoying at home!

Ingredients

Scale
  • ¾ cup (170g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 2 cups (248g) all-purpose flour
  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ teaspoon salt
  • 2 cups (226g) powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • 3 tablespoons (45ml) heavy whipping cream

Instructions

  1. Preheat the oven to 350°F and line two cookie sheets with silpat liners or parchment paper.
  2. Cream together the unsalted butter and granulated sugar in a stand mixer with a paddle attachment. Mix in the egg and vanilla extract. Add pumpkin pie spice, baking soda, cream of tartar, and salt, followed by the flour, mixing gradually.
  3. Scoop 2 tablespoon-sized balls of dough onto the prepared cookie sheets.
  4. Bake for 9-10 minutes until the bottoms are just golden; remove before they become too dark to retain softness.
  5. Let cool on the cookie sheets for 5 minutes, then transfer to a wire rack to cool completely before frosting.
  6. To prepare frosting, beat softened butter until creamy, mix in salt, and gradually add powdered sugar until crumbly. Incorporate vanilla, pumpkin pie spice, and heavy whipping cream until smooth, adjusting with additional cream as needed. Frost cooled cookies.
  7. Store cookies at room temperature loosely covered; frosting will semi-dry making them stackable.

Notes

Store the cookies in an airtight container for a longer shelf life.
These cookies are perfect for fall celebrations and are best enjoyed fresh.
Ensure the dough balls are spaced adequately on the baking sheet for even cooking.
