Description

These Pumpkin Truffles are a delightful treat packed with flavor. Made with a velvety cream cheese base and enriched with pumpkin puree, they are coated in smooth white chocolate. This recipe is simple to prepare and perfect for any gathering or as a tasty snack for yourself!

Ingredients

Scale
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until creamy and smooth.
  2. Mix in the pumpkin puree and cinnamon at a medium speed until well combined and smooth.
  3. Add graham cracker crumbs, pumpkin pie spice, and cinnamon. Mix on medium until incorporated and thick, about 1-2 minutes.
  4. Transfer the dough to a bowl, cover, and refrigerate for about 2 hours or longer if needed.
  5. Prepare a baking sheet with parchment paper.
  6. Scoop a tablespoon of dough, roll it into a ball, and place it on the baking sheet, leaving 2 inches apart. You should have about 20 truffles.
  7. Chill for 20-25 minutes before dipping in chocolate.
  8. In a microwave-safe bowl, add white chocolate chips and microwave in 10-15 second intervals, stirring until fully melted and smooth.
  9. Remove truffles from the refrigerator and use a fork to dip each one in the melted chocolate, ensuring they are fully covered.
  10. Scrape off excess chocolate from the bottom of the truffle with the fork and place it back on the parchment.
  11. Repeat the process with remaining truffles and re-dip if necessary for any missed spots.
  12. Sprinkle English toffee bits or graham cracker crumbs on top immediately. Allow to set until chocolate hardens.
  13. Return truffles to the refrigerator to fully set before serving.

Notes

Store truffles in an airtight container in the refrigerator for maximum freshness.
These truffles can last for up to a week when properly stored.
Feel free to mix and match toppings according to your taste!
