  • 2 3/4 cups milk

Instructions

  1. Preheat a waffle iron and spray with nonstick cooking spray.
  2. Separate the eggs; place the whites in a mixing bowl and set yolks aside. Beat egg whites until stiff peaks form and set aside.
  3. In another bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Create a well in the center and add egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil. Whisk until almost smooth, with some lumps remaining.
  4. Gently fold in the beaten egg whites into the batter until no streaks remain, taking care not to overmix.
  5. Pour batter into the preheated waffle iron per manufacturer's instructions and cook until golden brown on both sides.
