Description

This Raspberry Buckle Cake is a delightful dessert featuring a tender cake loaded with juicy raspberries and topped with a crunchy streusel. It’s simple to prepare and perfect for gatherings or a cozy family treat!


Ingredients

  • 4 1/2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1/2 cup (60g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon sea salt
  • 4 tablespoons (57g) cold butter, cut into slices
  • 2 cups (142g) raspberries
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 4 tablespoons (57g) butter, softened
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon orange zest
  • 1/2 cup (113g) whole milk, room temperature

Instructions

  1. Preheat the oven to 375ºF and line a 9-inch cake pan with parchment paper.
  2. Prepare the streusel by mixing granulated sugar, brown sugar, flour, cinnamon, ginger, and salt in a bowl. Add the cold butter and mix until crumbly.
  3. For the cake batter, combine flour, baking powder, and salt in another bowl. Beat together softened butter and granulated sugar until creamy. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and orange zest, then mix in half of the milk and flour, combining gently. Repeat with the remaining milk and flour mixture untiljust mixed.
  5. Pour half of the batter into the prepared pan, layer half of the raspberries on top, and then add the remaining batter and raspberries over that.
  6. Sprinkle the streusel evenly on top and bake for 35-45 minutes until a toothpick comes out clean.
  7. Cool the cake for 10 minutes on a wire rack before cutting into squares.

Notes

Ensure that the butter is cold for the streusel for a better crumb texture.
You can substitute other berries if raspberries aren’t available.
