Description

Roasted Zucchini is a flavorful and easy side dish that highlights fresh zucchini, olive oil, and cheese. Perfect for a quick dinner or healthy meal, this dish is sure to satisfy everyone at the table with its savory taste and crispy texture.


Ingredients

  • 1 lb zucchini
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes
  • 1/21 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 475℉. Use a large rimmed baking sheet; for a deeper golden color, grease it with oil instead of lining it with parchment paper.
  2. Wash and dry the zucchini. Trim the ends and slice it into 1/4-1/2 inch thick slices.
  3. In a mixing bowl, combine zucchini slices with olive oil, balsamic vinegar, and seasonings, mixing until evenly coated.
  4. Spread the seasoned zucchini on the prepared baking sheet in a single layer, leaving space between each slice.
  5. Sprinkle grated parmesan cheese on top of each zucchini slice.
  6. Roast the zucchini in the oven for 20-24 minutes, until they are at your desired doneness.

Notes

For crunchier zucchini, slice thicker.
For softer texture, slice thinner.
Adjust salt according to your taste.
