Description

This Rotel Chicken Bake stands out for its wonderful flavors and simple preparation. With tender chicken, zesty tomatoes, and melted cheddar cheese, it’s an ideal choice for a quick, comforting dinner that everyone will love.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles (1 can), drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat your oven to 400˚F.
  2. In a bowl, combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breasts and arrange them in a large casserole dish.
  3. Drain the rotel and layer it over the chicken to cover evenly. Sprinkle shredded cheddar on top.
  4. Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 5-10 minutes until the chicken reaches an internal temperature of 165˚F.
  5. Finish by garnishing with freshly chopped cilantro or green onions before serving.

Notes

For a spicier kick, consider using hot rotel tomatoes instead of mild.
Feel free to substitute other types of cheese as desired for different flavor profiles.
Serve with rice or a side salad for a complete meal.
