- 2 lbs boneless, skinless chicken breast
- 10 ounces rotel tomatoes with green chiles (1 can), drained
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ¾ cup shredded cheddar cheese
- freshly chopped cilantro
- freshly chopped green onions
Instructions
- Preheat your oven to 400˚F.
- In a bowl, combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breasts and arrange them in a large casserole dish.
- Drain the rotel and layer it over the chicken to cover evenly. Sprinkle shredded cheddar on top.
- Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 5-10 minutes until the chicken reaches an internal temperature of 165˚F.
- Finish by garnishing with freshly chopped cilantro or green onions before serving.
