Description

Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, as needed

Instructions

  1. Preheat the oven to 375°F and line a baking pan with foil or parchment paper.
  2. Slice the zucchini in half lengthwise and scoop out the flesh, roughly chopping it and setting it aside.
  3. In a skillet over medium-high heat, cook the sausage for 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and chopped zucchini to the skillet, cooking until the sausage is fully cooked and the vegetables are softened, about 3-4 minutes more.
  5. Stir in the marinara sauce and mix well.
  6. Arrange the zucchini boats in the baking pan, seasoning with salt and pepper. Fill each boat with the sausage mixture and top with mozzarella cheese.
  7. Bake for 15-20 minutes until the cheese is melted and the sausage is bubbly, checking that the zucchini is tender. Adjust cooking time as necessary for thicker boats.
  8. Serve while warm and store any leftovers in the fridge.

Feel free to use spicy sausage for more heat.
