Description

This Sharp White Mac and Cheese with Broccoli is a delightful blend of rich flavors and healthy ingredients. Featuring creamy cashew sauce and bright broccoli, it’s an ideal quick dinner that will satisfy your soul. Enjoy a homemade meal that’s both nutritious and delicious!

Ingredients

Scale
  • 1 cup raw cashews
  • 12 ounces small pasta of choice
  • 2 heads broccoli chopped into florets
  • 1/2 cup water
  • 1 block (10.8oz) Mori Nu silken tofu
  • 4 tablespoons nutritional yeast
  • 3 tablespoons lemon juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  1. Soak the cashews in boiling water for at least 5 minutes while you prepare the rest of the dish.
  2. Cook the pasta in boiling water for 5-6 minutes, then add the chopped broccoli and cook for an additional 1-2 minutes. Drain and set aside.
  3. Drain the soaked cashews and discard the water. In a high-powered blender, combine the cashews, 1/2 cup fresh water, silken tofu, nutritional yeast, lemon juice, onion powder, garlic powder, and salt. Blend until smooth and creamy.
  4. Return the drained pasta and broccoli to the pot. Pour the cheese sauce over the pasta and mix well to coat. If needed, warm over low-medium heat before serving.

Notes

For added flavor, season to taste with fresh herbs or spices.
This dish can be made vegan and is packed with protein thanks to the cashews and tofu.
Feel free to use whole grain pasta for a healthier option.
