Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Prepare a pie pan by spraying it with non-stick spray and set aside.
  2. Pit, peel, and slice enough peaches to measure 5 cups and place them in a medium-sized bowl.
  3. Add sugar, cornstarch, vanilla, and lemon juice to the peach slices and stir until well combined.
  4. Pour the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together flour, brown sugar, and cinnamon until combined. Add cold, cubed butter and pulse until crumbly. Gently mix in the rolled oats.
  6. Spread the oat mixture evenly over the peaches in the pan.
  7. Bake for 30-35 minutes, or until the topping is golden brown.

Notes

For extra flavor, consider adding a pinch of nutmeg to the oat topping.

You can use frozen peaches if fresh ones are not available.
