- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch

- 1 tbsp lemon juice
- 1/2 cup flour
- 1/2 cup brown sugar

- 1/2 cup butter, cold & cubed
- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Prepare a pie pan by spraying it with non-stick spray and set aside.
- Pit, peel, and slice enough peaches to measure 5 cups and place them in a medium-sized bowl.
- Add sugar, cornstarch, vanilla, and lemon juice to the peach slices and stir until well combined.
- Pour the peach mixture into the prepared pie pan.
- In a food processor, pulse together flour, brown sugar, and cinnamon until combined. Add cold, cubed butter and pulse until crumbly. Gently mix in the rolled oats.
- Spread the oat mixture evenly over the peaches in the pan.
