Ingredients You’ll Need

  • 2 ears of corn (husk removed): Fresh corn adds a sweet crunch. If out of season, feel free to use frozen corn.
  • 1/2 pound asparagus: Trimmed and cut into pieces, asparagus brings a tender, earthy flavor. You can substitute with green beans if preferred.
  • 1 cup snap peas: These sweet, crisp vegetables are an essential addition for that textural contrast. If unavailable, frozen peas would work too.
  • 1 cup orzo or your favorite high-protein pasta: Use orzo for its delightful shape that hugs the dressing. A protein-packed option can be great for those needing that extra boost!
  • Extra virgin olive oil: This high-quality oil is perfect for sautéing and adds amazing flavor. Look for a cold-pressed option for the best taste.
  • 1 bunch of chives, thinly sliced: Chives offer a mild onion flavor, brightening every bite. Scallions can be a tasty substitute.
  • 2 cups arugula: Peppery and flavorful, arugula lightens the salad. Spinach can be used for a milder flavor if you prefer.
  • 1/4 cup pepitas: These toasted pumpkin seeds add a nice crunch. Sunflower seeds also work well as an alternative!
  • Red pepper flakes, optional: Just a pinch adds a nice kick to the dish, but feel free to omit if you’re sensitive to heat.
  • Kosher salt: Essential for seasoning; adjust to taste during preparation.
  • 4 garlic cloves: Minced, to add depth and aroma to the dressing.
  • 1 shallot, roughly chopped: Shallots provide sweetness and complexity. Yellow onion is a fine substitute if needed.
  • 1 tbsp pepitas: Toasting them enhances the flavor, making them a delicious topping.
  • 1 tsp Dijon mustard: This adds creaminess and a subtle tang to the dressing.
  • 1 tbsp white balsamic vinegar: It brightens the dish without overpowering. Apple cider vinegar can also be a good match.
  • 2 tsp agave syrup (optional): A touch of sweetness balances out the acidity of the dressing; honey is a great alternative.
  • Zest and juice of 1 lemon: Fresh lemon brings a vibrant zing that can brighten any dish.
  • 1 cup fresh basil leaves, lightly packed: A key player in the dressing, basil brings freshness; combining it with parsley can enhance the flavor profile.

How to Make Spring Orzo Pasta Salad with Creamy Basil Vinaigrette

  1. Prepare Your Veggies: Clean and trim the corn kernels from the cob, slice the asparagus into 1/4 inch pieces, and trim the ends of the snap peas, slicing them at a bias. The variety of cuts adds visual interest to your salad.
  2. Cook the Orzo: Bring a medium pot of water to a boil, and generously salt the water. Cook 1 cup of orzo until al dente, according to package instructions. Drain the pasta and transfer it to a large mixing bowl.
  3. Sauté the Corn: Into a medium-sized sauté pan, add about 1 tablespoon of olive oil over medium-low heat. Spread the corn kernels in a single layer, cooking undisturbed for 3-4 minutes until they start to char. Toss in a pinch of salt and sauté for an additional 2 minutes, then transfer the corn to the bowl with the orzo.
  4. Sauté the Asparagus: In the same pan, add the asparagus along with a pinch of salt. Sauté for 3-4 minutes, until the asparagus turns a vibrant green. Once done, add them to the orzo bowl, followed by the snap peas, chives, pepitas, and arugula.
  5. Prepare the Dressing: Return the pan to the stove and add 3 tablespoons of olive oil. Toss in the minced garlic and chopped shallots with a pinch of salt, sautéing for about 3-4 minutes until they turn lightly golden. Add the pepitas for toasting and let them cook for another 2-3 minutes.
  6. Blend the Dressing: Move the sautéed garlic, shallots, and pumpkin seeds into a blender cup. Allow to cool for 5 minutes, then add 1 tablespoon of olive oil, Dijon mustard, white balsamic vinegar, agave syrup, lemon zest, and lemon juice along with a generous pinch of salt. Blend until smooth; if too thick, add 2 tablespoons of water and blend again. Finally, add the fresh basil and blend until fully combined.
  7. Combine and Serve: Pour the creamy basil vinaigrette over your salad and mix well until everything is fully coated. Taste and adjust seasoning with more salt or lemon if needed. You can serve it immediately or chill it for later enjoyment. For an extra touch, consider a sprinkle of red pepper flakes to finish!

Storing & Reheating

For optimal freshness, store your Spring Orzo Pasta Salad in an airtight container in the refrigerator for up to 3 days. If you leave it at room temperature, enjoy within an hour to ensure safety. Freezing isn’t recommended as the texture may suffer, but if you do freeze it, aim to consume within 3 months. To refresh, simply drizzle a bit more olive oil and lemon juice before serving, as the flavors may mellow over time.

Chef’s Helpful Tips

  • Avoid overcooking your orzo to ensure it maintains a pleasant bite; it should be al dente!
