- 3 cups (360 g) all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (227 g) unsalted butter, room temperature
- 1 and 1/4 cups (248 g) granulated sugar
- 1/4 cup (53 g) light brown sugar, packed
- 1 tablespoon (14 ml) vanilla extract
- 2 large eggs, room temperature
- 11 ounces white chocolate chips
- 2 1.2 ounce bags (68 g) freeze-dried strawberries
Instructions
- Preheat the oven to 325°F. Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a stand mixer or large bowl, beat butter and both sugars on medium speed for about 3 minutes until light and fluffy. Beat in vanilla extract.
- Reduce mixer speed to medium-low and add eggs one at a time, mixing well after each addition.
- Lower mixer speed to low and add flour mixture until just combined. Mix in white chocolate chips and dried strawberries until evenly combined.
- Scoop 3 tablespoons of dough, roll into a ball, and place on baking sheets, showing the prettiest side up. Leave 2 inches between cookies.
- Bake for 12 to 13 minutes, until golden on edges but still soft in the middle.
- Remove from oven and use a spatula to tuck in any edges for a round cookie shape. Press extra chocolate chips on top if desired.
- Cool cookies on the wire rack for 20 minutes before serving.
Notes
Ensure to use room temperature butter and eggs for better mixing.
These cookies can be stored in an airtight container for up to a week.
