Description

Strawberry Cheesecake Chimichangas are a delightful treat packed with creamy cheesecake and fresh strawberries, making them perfect for any gathering or sweet craving.


Ingredients

  • 1 (8 oz) Cream Cheese, Softened
  • 1/4 cup Sour Cream
  • 1 tbsp Sugar
  • 1/4 cup Sugar
  • 1 tsp Vanilla
  • 1/2 tsp Lemon Zest
  • 6 (8 inch) Flour Tortillas
  • 1 3/4 cups Strawberries (Diced)
  • 1 tbsp Cinnamon
  • Oil for Frying

Instructions

  1. In a mixing bowl, beat the softened cream cheese, sour cream, 1 tbsp sugar, vanilla, and lemon zest until smooth and creamy.
  2. Fold in 3/4 cup diced strawberries.
  3. Divide the mixture evenly between the flour tortillas, spreading it in the lower third of each tortilla. Fold the sides toward the center and roll up each tortilla like a burrito, securing with a toothpick.
  4. Combine the remaining 1/4 cup sugar with cinnamon in a small bowl and set aside.
  5. Line a large plate with paper towels.
  6. In a large deep saucepan, heat 3 inches of oil over medium-high heat until it reaches 360 degrees.
  7. Working in batches, fry the chimichangas until golden brown and crispy, flipping as needed. Transfer to the paper towel-lined plate to drain for 1 minute, then roll in the cinnamon and sugar mixture.
  8. Repeat the frying and rolling process with the remaining chimichangas.
  9. Remove toothpicks and serve with remaining diced strawberries.

Notes

Ensure oil is at the correct temperature for frying to achieve crispy chimichangas.
Replacing strawberries with other fruits like blueberries can create different flavors.
Serve with whipped cream or chocolate sauce for added indulgence.
