- 1¾ cup (210 g) powdered sugar

Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a stand mixer, blend the salted butter and granulated sugar on medium-high speed until light and fluffy, about 3 minutes. Mix in the egg, egg yolk, vanilla, and almond extract at low speed until well combined, about 30 seconds.
- Gradually incorporate the baking soda, salt, and flour until the mixture is smooth.
- Using a ¼ cup cookie scoop, form large dough balls and place 6-7 on the prepared sheets.
- Bake the cookies in the preheated oven for 11-14 minutes until the edges are a light golden brown and slight crackling appears on top. Avoid overbaking to keep them chewy.
