  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese, room temperature
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, blend the salted butter and granulated sugar on medium-high speed until light and fluffy, about 3 minutes. Mix in the egg, egg yolk, vanilla, and almond extract at low speed until well combined, about 30 seconds.
  3. Gradually incorporate the baking soda, salt, and flour until the mixture is smooth.
  4. Using a ¼ cup cookie scoop, form large dough balls and place 6-7 on the prepared sheets.
  5. Bake the cookies in the preheated oven for 11-14 minutes until the edges are a light golden brown and slight crackling appears on top. Avoid overbaking to keep them chewy.
  6. In a bowl, beat together the cream cheese and salted butter until smooth. Add vanilla, a pinch of salt, and powdered sugar, mixing until creamy.
  7. Chop fresh fruit into small pieces and layer it on top of each frosted cookie.

Notes

For extra flavor, consider using vanilla paste instead of regular vanilla extract.
