- 1 pound ground beef
- 1 ounce taco seasoning
- 2/3 cup water
- 1/2 cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons fresh cilantro, finely chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 cups cooked white rice or brown rice
- 1/2 red onion, diced
- 1 avocado, diced
- 1/2 cup corn, canned, fresh, or frozen
- 2 cups romaine lettuce, chopped
- 2 roma tomatoes, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shredded cheddar cheese
Instructions
- Heat a large skillet over medium heat.
- Add ground beef to the skillet and cook for about 6-8 minutes, breaking it apart until browned and fully cooked. Drain excess grease.
- Stir in taco seasoning and 2/3 cup water, and simmer for 2-3 minutes until the sauce thickens and coats the beef. Remove from heat.
Notes
Feel free to substitute the ground beef with ground turkey or chicken for a lighter option.
Customize your toppings to include jalapeños or salsa for an extra kick.
