Description

This Tzatziki Chicken Salad features tender chicken, creamy tzatziki, and fresh vegetables. It’s a delightful, healthy meal that comes together quickly, making it perfect for lunch or dinner.


Ingredients

  • 1 cup plain greek yogurt
  • 1/2 cup finely grated english cucumber, squeezed dry
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, pressed or finely minced
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-ground black pepper
  • 3 cups diced cooked chicken
  • 1 cup diced english cucumber
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 1/3 cup finely diced red onion
  • 1/4 cup chopped fresh dill
  • 1 tablespoon lemon juice, plus more to taste
  • 1/2 cup toasted sliced almonds
  • fine sea salt and freshly-ground black pepper, to taste

Instructions

  1. Prepare the tzatziki by mixing the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, mint, salt, and pepper in a bowl. Adjust seasoning with extra lemon juice, garlic, salt, or pepper to taste.
  2. In a large bowl, combine the diced chicken, cucumber, chickpeas, feta, red onion, and dill to create the chicken salad.
  3. Pour the prepared tzatziki over the chicken mixture and gently mix until everything is well coated. Add lemon juice and adjust seasoning with salt and pepper if necessary.
  4. Chill the salad in the refrigerator for at least 30 minutes to enhance the flavors if time allows.
  5. Before serving, stir in the toasted sliced almonds for added crunch.
  6. Serve the salad chilled in pita, wraps, lettuce cups, or on greens, and enjoy.

Notes

For a vegetarian version, substitute chicken with additional chickpeas or tofu.
Feel free to adjust the herbs to suit your taste; more dill or mint can enhance the flavor profile.
The salad is best enjoyed fresh but can be stored in the refrigerator for up to 3 days.
