Description

These Zucchini Fritters are a delightful blend of fresh zucchini, creamy cheeses, and savory garlic, making them a perfect snack or side dish for any meal. With simple prep and incredible flavor, they are ideal for quick dinners or healthy eating.


Ingredients

  • 3 tbsp avocado oil
  • 2 cups shredded zucchini (around 1.5 lbs)
  • 1 cup panko bread crumbs
  • 2 eggs
  • 1/3 cup fresh grated parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper

Instructions

  1. Grate the zucchini and transfer it to a mesh bag or cheese cloth. Squeeze out as much liquid as possible to prevent sogginess.
  2. In a mixing bowl, combine the drained zucchini with all remaining ingredients and stir until well mixed.
  3. Preheat a large pan over medium heat and add oil. Use an ice cream scoop to portion the mixture, shaping them into fritters as you go.
  4. Place the fritters in the pan and cook for 4-6 minutes on each side. Avoid flipping them before they are ready to ensure they stay intact.
  5. If making more than one batch, add additional oil to the pan as needed between batches.

Notes

Make sure to remove excess moisture from the zucchini to achieve crispy fritters.
Cook on medium to medium-low heat to ensure that the fritters cook through without burning on the outside.
These fritters can be served with a side dipping sauce for added flavor.
